Baked garlic lemon tilapia with basmati rice

You’ll need two large tilapia fillets, freshly ground multi-colored peppercorns (we prefer red, white, green, and black), freshly squeezed lemon juice and lemon wedges, minced garlic, and butter or olive oil for this recipe, which takes about 30 minutes to prepare.

Season the fish fillets with salt, pepper, rosemary, or other specific fish spices, if desired, before cooking. Dab the fillets with extra virgin olive oil or butter using a pastry brush, and set them aside for a few minutes. Place the fillets in a pan with the lemon wedges and cook until done. Preparing the fish in the oven takes approximately 40 minutes, or until the meat is tender and juicy.

Remove the fillets from the oven and coat them with the minced garlic and a pinch of salt and pepper before placing them back in the oven for another five minutes to finish cooking.
